Sure, it’s great to get all of the adorable little outfits for your newborns, but they wear them once, maybe twice, and then poof! Your little one outgrows them. What do you do with all the little clothes scattered around your house now?

The answer is: you sell them.

Lemon Celeb: Cameron Diaz’s Delicious Rotisserie Chicken Nacho Recipe! 🥑 🌽 🍅

Cameron Diaz is back in the kitchen and filming a personal cooking show for all of us at home! Diaz recently took to Instagram to film one of her favorite recipes, and now, we’re sharing it with you!

Ingredients:

Cilantro Crema:

  • 1 bunch cilantro

  • 1 cup sour cream

  • Juice of 1 lime (she used 2 in her video, so it’s up to you!)

  • ½ clove minced garlic

  • 2 pinches of Kosher salt

Nachos:

  • 1 Rotisserie Chicken or Roasted Chicken

  • 1 bag organic corn tortilla chips

  • 1-2 packages of Mexican Three Blend Cheese

  • 1 cup diced red onion

  • 1 cup diced zucchini

  • 1 cup diced summer squash

  • 2 ears of corn

  • 1 cup Tomatillo Salsa

  • 1 can pickled jalapeños

  • ½ cup cotija cheese

  • 1-2 diced avocados

  • 1 cup chopped cilantro

  • 1 tsp taco seasoning

Instructions

  1. Preheat oven to 400º F.

  2. Make the sauce. Blend all the ingredients and add 2 big pinches of kosher salt to the mixture. Put it in the fridge.

  3. Chop all of the vegetables and shred the chicken, then set aside.

  4. Sauté your onions until they’re soft and brown, then add garlic and sauté until the garlic is aromatic. Add the zucchini and squash to cook them as well.

  5. As the veggies cook, fire roast your corn on the flame of your stove to get it charred.

  6. Cut the corn off the cob and add it to the vegetable mixture.

  7. Add a teaspoon of your favorite taco seasoning and a bit of water. Turn the heat up to high as the flavors mix.

  8. Layer a sheet pan with parchment paper, then add the chips, shredded cheese, and veggie mixture. Sprinkle more cheese on top, add the pickled jalapeños, and finally add the chicken on top.

  9. Back for 10 minutes, or until everything is melted and crispy.

  10. Sprinkle some avocado on top of the nachos, then add the crema. Add cotija cheese, cilantro, and salsa to serve!

Parents who answer ‘yes’ to any of these four questions might want to scale their indulgence back a bit.

  2. “Am I giving a disproportionate amount of family resources to one or more of the children?”

  3. “Do the choices I make exist to benefit me, the adult, more than the child?”

  4. “Does the child’s behavior potentially harm others, society, or the planet in some way?
